I found that you cannot clamp down hard enough on the fabric to hold it, even in a moderate wind. Thus defeating it intended use.

For the most part, just two is fine. However, older awning tend to lose tension so they flap more in the wind and may require 2 per side depending on how bad wind gusts are. Quantity will have to be based on owner judgment, age of awning plus general weather conditions in area being camped at.
